Ever tried making biscuits and just failing at them! You end up looking for alternate recipes and continue trying with no hope! Well, I have been using this lovely buttery biscuit recipe ever since I first learned how to bake biscuits (that’s over 10 years ago now)! This recipe can be made to look like you have used a hundred different recipes by just adding different items to it such as nuts, cherries, cornflakes, etc.
1 cup icing sugar
1 cup cornflour
1/4 cup oil
1 tsp Vanilla essence
Flour to make a soft dough (but not sticky)
You can use a fork, a wooden spoon or an electric mixer or even a whisk to make these biscuits. I will give you this recipe using a whisk. Allow the butter to soften then whisk for a few minutes. If you are using margarine its best to whisk till its a very light colour. Add the icing sugar and cornflour to the butter and mix well. Add oil and mix again. Your mixture should be smooth and creamy. Add the vanilla (optional). Add flour a cup at a time mixing after each cup. When your dough starts to form add little bit of flour and mix until your dough is soft but does not stick to your fingers.
You can push this dough through a nozzle, roll into small balls filled with nuts or roll out and cut into shapes. Bake until firm to the touch. Remove from oven and leave to cool. You can decorate and drizzle with chocolate as you wish!
