Choc-Kit Biscuits

Choc-kits a biscuit popular in South Africa and made with coconut, golden syrup and oats. These biscuits are really rich – well I ate one the other and thought that it was. I made these for Eid – not sure which recipe book this is from – but I give credit to the creator of this recipe.

1 cup oats
2 1/2 cups flour
1 cup castor sugar
1 cup coconut
4 Tblsp golden syrup
2 tsp bicarbonate of soda
250g butter

Beat butter and sugar until creamy. Combine rest of ingredients. When adding flour to any biscuit recipe add it a little at a time until you get a soft but not sticky dough. Roll out dough and cut into oval shapes. Make a slit in each biscuit in the middle. You don’t have to follow the oval shape as you will see in my picture. Bake for about 10-15 minutes – these biscuits will still feel a bit soft but once cooled they get quite crunchy. Once cold, melt chocolate and sandwich together with the melted chocolate.
