Doughnuts

I love a good doughnut! Yum!

The bakery is my favourite place to be… the smell of something fresh baking away… the yummy cakes and pastries behind the counter… hmmm….

Wonderful to look and definitely even better to eat. I don’t usually buy doughnuts from a bakery – only because it has cream in it… I don’t like fresh cream although I do use it in my cooking and baking. I do think Oly Whip has a much better taste and it’s non-dairy. 🙂

I have been feeling for doughnuts for a while now and wanted to make them but whenever I do it just doesn’t stay soft… eventually I pulled up the courage and went for it!

The doughnuts turned out soft, yummy, lasted the week – excited! sigh! Yumlish!

Doughnut Recipe:
4 cups flour
4 tsp baking powder
1/4 tsp baking soda
2 eggs
1/4 cup melted butter (approx 75g solid butter)
1 cup sugar
1 cup maas/buttermilk (1 cup milk and 2tsp vinegar works just as well)
1 tsp nutmeg (I usually substitute this with ground cinnamon)
pinch of salt

Method:
Beat the eggs and the sugar until creamy. Add the melted butter and continue to beat. Then add the maas, nutmeg and salt and beat again. Lastly, add in the flour, baking powder and baking soda and mix well. I usually use my electric mixer to beat the mixture with 2 cups flour and then work the other 2 cups in by hand. Don’t add in all the flour at once. Add 2 cups first then work in the other 2 cups. You may not require all of the flour. The dough must be soft and slightly sticky is ok.

Flour your surface and mix your dough properly and then roll – adding flour to your surface as you work so it doesn’t stick to the surface. Roll the dough about 1cm thick and cut using a doughnut cutter. If you don’t have a doughnut cutter use something round (like a glass) and for the doughnut hole you could use your food coloring lid or something similar.

Heat oil to medium and deep fry doughnuts until golden on each side. You don’t want your oil too hot because your doughnuts will not be cooked through on the inside.

While your doughnuts are frying or before… take another pot and add the following for the syrup:
Syrup Recipe:
2 1/2 cups sugar
1 1/2 cups water
few drops lemon juice

Boil the above until you get a syrup. It should still be thin. Keep warm.

Once you have fried your doughnuts, drain and dip into the sugar syrup and remove. Do not leave the hot doughnuts in the warm syrup for long as it will suck up too much syrup. Toss in dessicated coconut and leave on a tray to cool.

There will be a few doughnut holes left – I bet you going to be munching on these before you get through the batch of doughnuts! haha. I did! 😀

This recipe makes approximately 20 doughnuts plus a few doughnut holes.
