Golden Syrup & Pecan Pudding (self saucing)

It was winter and I was looking for something comforting to dig into and spoil my palate… And boy was this a gorgeous pudding. The best part you don’t need to use your electric mixer and you need just 2 bowls! Now what could be more perfect…

1 1/4 cups self-raising flour

1/3 cup firmly packed brown sugar

1/2 cup milk

1 egg

80g butter, melted and cooled

2 Tblsp golden syrup

2/3 cup pecan nuts, chopped

Preheat oven 180 degrees. Grease and line 20cm oven proof dish.

Sift flour, stir in sugar and mix in pecans. In another bowl whisk eggs, milk, butter and golden syrup. Pour into dry ingredients and gently stir to combine. Spoon into lined dish and smooth surface.

Sauce:

1/2 cup firmly packed brown sugar

3 tsp cornflour

1/4 cup golden syrup

1 1/4 cups boiling water

Combine sugar and cornflour. Sprinkle over pudding.

Combine golden syrup and boiling water. Pour over back of metal spoon onto pudding.

Bake 55-60 minutes or until baked through.

This pudding goes really well with custard and perfectly cuts the sweetness of the pudding.
