1 1/2 cups warm water
3/4 Tblsp instant yeast / 1Tblsp dry active
2 Tblsp sugar
2 Tblsp oil
1 tsp salt
4 cups flour, approximately
Combine water, yeast, oil, salt and 2 cups flour. If using dry active let it proof first in the water and sugar until foamy before adding oil, salt and flour.
Add rest of flour gradually until it pulls away from the sides. Dough should be soft and tacky. Knead dough. Leave to rise in oiled dish.
For spiral bread roll out dough after the first rising and kneading down. Fill with whatever savoury filling you want and roll like a swiss roll. Slice and bake approx 20 mins.
Saute 1-2 onion in little butter, add garlic, tri-color peppers (1 each), mushrooms (2 punnets), salt, pepper, herbs. Dry it out but entirely. You can smear creamed cheese on the dough before adding this mixture as well. Options are endless here.
For the buns/rolls: turn out dough after rising, roll 12 equal balls. Place on lightly greased tray and cover lightly with cling. Let rise about 45 mins.
Bake 12-14 mins.
