Marshmallow Bars

Love marshmallows? Well, this one is for you… Fairly simple. The chocolate just adds more flavor to this delightful mallowy biscuit. Hmmm… Yummy… Munch… Munch… Munch!

Biscuit Base:

110g margarine
1/2 cup sugar
1 egg
1/2 tsp vanilla essence
1 tsp baking powder
1 1/2 cups flour

Cream butter and sugar. Then add egg and vanilla. Make a dough by adding the flours a little at a time. Pat dough into lightly greased baking pan. Bake 180 degrees for approximately 15 minutes or until lightly brown in colour. Remove and cool.


Melt chocolate and smear it over the base. I used Cadbury plain milk chocolate but u can use whatever chocolate you like. You can leave this step out or smear apricot/strawberry jam instead. Jam must be heated in the microwave for easy smearing and it will set when cooled.


1 cup sugar
1 cup water
1 1/2 Tblsp gelatine
1/2 tsp vanilla


Put sugar and water in pot. Sprinkle gelatin over. Stir over a low heat until sugar dissolves. Bring to a boil then reduce heat and simmer for about 8 minutes. The mixture should now be transparent.

When almost cold pour mixture into electric mixer and beat until white, thick and doubled in size. This can take up to 15 minutes (depending on the speed of your mixer) so be prepared.


Pour and spread the marshmallow mixture onto the biscuit.


Toast some coconut until light brown in colour and sprinkle over marshmallow. Pat down lightly.


Slice biscuit into bars and you ready to indulge…
