Pancake Casserole


I love pancakes and I’m guessing I’m not the only one! But, always resist the urge because it’s so indulgent.

Here’s another dinner idea that tastes delicious. A non-stick pan means no oil when frying these pancakes! The sauce doesn’t make the pancakes soggy even when eating these the next day.


1 egg

1/2 Tblsp butter, melted

1/2 tsp baking powder

1/2 cup milk

1/2 cup flour

1/2 cup water

Beat egg with milk. Add melted butter, flour and baking powder. Add water.

Grease pan lightly if not using a non-stick pan. Using a laddle pour some batter into pan and move pan around to get the batter fill the bottom of pan. This will get you round pancakes. You should get approximately 7-8 pancakes – side plate size.

Fill with meat of your choice and roll. Layer in casserole and pour white sauce over. Top with cheese and sprinkle dried herbs. Bake until heated through.


2Tblsp butter

2Tblsp flour

1 cup milk

1/4 tsp crushed garlic

Salt n pepper

Melt butter. Add flour and braise. Add garlic. Then add milk a little at a time. Sauce should be of medium thickness.
