Baked Beans – curry with a twist

Baked beans can be made in so many different ways. I guess it is a matter of choice and taste.

This is the way I cook my baked beans and you could serve it at a braai, a main dish, a side dish, a topping for pizza or baked potatoes or even for breakfast.

1 tin baked beans

Half onion, thinly sliced

1 tsp mixed herbs/ italian

Fresh curry leaves (7 leaves)

Half small green pepper, chopped

1 tomato, chopped

1/2 tsp coriander powder

1/4 tsp chilli powder

Sprinkle of pepper

2 fresh chillies (jalepeno, slit in halves)

2-3 Tblsp butter

Salt to taste

Fry onion in butter for 3 minutes then add 3/4 tsp mixed herbs, 4 curry leaves,quarter green pepper. Fry till onion is soft but not brown.

Add chillies, tomato, coriander powder, chilli powder and pepper. Cook for a few minutes then add baked beans and rest of green pepper, curry leaves and mixed herbs. Simmer for approximately 3 minutes.

This dish can be  topped with cheese.
