Soft Pillowy Naan

I usually make roti or puri to accompany certain meals but I was looking for something easy but different. When I found this recipe I was very intrigued to see what was so pillowy about it cause a name of a dish should match it!

This dough was so soft on the hands (like pillows) and there is no long rising times either. The potato in this recipe gives it that extra softness.

2 1/4 cups flour

1/2 cup mashed potato

1 1/4 tsp yeast

1 tsp sugar

3 Tblsp yogurt/maas

1 Tblsp butter, softened

1/4 tsp baking powder

1/2 tsp salt

water (to make a dough)

Garlic butter

Mix together flour, yeast, salt, sugar and baking powder. Mix potato, yogurt, butter and half cup water. Add wet ingredients to dry and mix into a soft dough. Leave dough to rise until you are ready to toast. Divide into balls and flatten out wit fingers but don’t make too thin. Leave 15 minutes on a well floured surface. Do not leave it for longer as it will end up sticking to your surface. Grill on high (on stove in pan) both sides then brush with garlic butter after toasting.

Best served and eaten the same day.
