A lamington is a piece of cake (usually square or rectangular in shape) dipped in a chocolate syrup and rolled in coconut.


125g margarine

2 eggs

3/4 cup sugar

1 3/4 cup flour

1/4 cup milk

1/2 tsp vanilla essence

2 tsp baking powder

Line and grease oven tray. Cream margarine and sugar properly. This might take a few minutes. Add eggs then alternately add milk and flour. If the mixture is too thick (usually is – add bit more milk (not more than 1/4 cup). Bake at 180 degrees. The top will become a beautiful golden color. When it is cooked through remove and cool completely. Slice into squares/rectangles.


2Tblsp margarine

1 tsp coffee

1 1/2 cup icing sugar (powdered)

2 Tblsp cocoa

1Tblsp Milo (optional)

1tsp vanilla essence

1 1/2 cup water

3/4 cup milk/water

Put in pot and boil till syrupy. The last ingredient I wouldn’t use all milk (do half milk half water to make up the 3/4 cup). Remove and let cool. When the syrup is warm dip the cake squares on all sides. Don’t dip for a long time as the cake will suck up all the liquid and you will have soggy cake. Once the cake has been dipped roll in coconut.

Note: the cake recipe is very tasty on its own too so you can have it as a tea cake too.
