Sugar Beans Curry

1 cup sugar beans

Half an onion, sliced
1 tomato, grated
1 potato, quartered (optional)
1/2 tsp chilli powder
1/4 tsp tumeric powder
1/2 tsp crushed dhania powder
1/2 tsp crushed cumin powder
1/4 tsp whole cumin
1/4 tsp crushed garlic
3-4 Tbsp oil
Salt to taste
Rinse beans. Put beans into pot cover with water and boil till soft – add salt. Heat oil in another pot and add onion. Add whole cumin and fry until golden. Then add tomato and spices together with potato. Cook until oil comes to the top and potato is cooked.
You don’t want a lot of water in the beans so drain off the excess. Add to tomato chutney. Simmer for a few minutes. Add fresh chopped dhania and mix.
Serve with roti.
Note: you can use canned sugar beans.
