Tangy Aubergine Curry

I love vegetables! But you know that already… I hadn’t made aubergines in a long time. This curry has a tangy and sour taste to it. You could leave out the tamarind – the curry is very tasty with or without it. A sprig of curry leave for added flavor.

1 onion, sliced

1/4 cup oil

3 potatoes, cut chunky

4 large Aubergines, cut chunky

2 tomatoes, chopped

1/2 tsp chilli powder

1/4 tsp tumeric powder

1 flat tsp coriander powder

1 flat tsp cumin powder

2 green chillies

1 Tblsp tamarind

1/2 cup water

1/4 tsp sugar

Salt to taste

Soak tamarind in water. Pass through a sieve. You need the liquid only – keep aside. Saute onions for a few minutes, add potatoes and green chillies. Smells delicious…hmmm… Cook for 5 minutes then add aubergines, tomatoes and spices. Leave to cook. When done add the tamarind water and simmer for a few minutes.
