Green Chillies Relish

I love a good pickle / relish / atchar. The end product always looks so complicated but it’s really easy to make. Your family and friends will be raving about how delish it is and even more about how much effort you put it…

250g chillies, slit (mild)

1/2 tsp crushed jeera

2 tsp sugar

1 tsp rough salt

2 tsp sesame seeds

3 tsp crushd garlic

1 tsp mustard seeds

2 tsp coconut

1/2 tsp methi seeds

2-3 green chillies, slit

Tamarind juice

3 Tblsp oil
Heat oil. Add dry ingredients. When simmering, add chillies. When chillies turns color – it’s done. Mix tamarind with vinegar and pass through a sieve. Add tamarind juice to chillies mixture. Stir well and leave to thicken for a few minutes. When cold, bottle and store in fridge.
This pickle is more of a mushy chilly recipe – a cross between a chutney and a pickle. You can cook the chillies less if you wish.
