Chicken & Dumplings

This is a childhood memory…. Going over to gran’s house for the weekend and gran always makes the best food hey!

A firm favourite was my grandmother’s dumplings with pieces of chicken amongst us all and this is the way my mum made it and now me!

Hmmm… Comforting, soft and light dumplings. Full of flavor – lightly spiced chicken with fluffy dumplings.

6 pieces chicken / 2 fillets cubed

1 small onion

1 tomato, grated/chopped

1 cinnamon stick

2 elachi pods

2 cloves

1/2 tsp chilli powder

1/4 tsp tumeric powder

Salt

Fry onions in oil till soft and lightly browned.

Add in the chicken and when sealed and spices and cook for a few minutes.

Add tomato. You could add sliced carrots if you like and even chunks of potato.

When chicken is cooked add approximately 2 cups of water then add dumpling mixture (when water is boiling) and leave to cook for +/- 10 minutes. Do not lift the lift before 10-15 minutes of cooking. Allow the dumplings to cook and become fluffy.

DUMPLINGS MIXTURE

1 cup flour

2 tsp baking powder

1 Tblsp butter/margarine

Salt

Mix all of the above together. Then add water to make a sticky dough. Add scoops of the mixture into the chicken pot and leave to cook. When light and fluffy the dumplings are cooked.

Notes:

– Use the chicken pieces that you like.

– You can use lamb or steak I stead of chicken.
