Chicken & Corn Soup

With the cold winter weather upon us all in South Africa – some colder than others – I thought it would be the perfect time to share some soup recipes. Just what we need to keep us warm during these very, very, icy days.

1 litre water

1 litre  milk

1 tin cream style sweet corn

2 chicken fillets, cubed

1 tsp mustard powder

A pinch of tumeric powder

1 green chilli, optional

1 packet cream of chicken soup

2 Tblsp cornflour

250ml cream

Salt and pepper

Marinate chicken with spices. When chicken is cooked through, add milk and water and bring to a boil. Add sweetcorn. Boil soup until it thickens. Make a paste with cornflour and a little cold water – then add to soup. Before serving add cream. Mix through and serve
