Easy Chicken & Vegetable Soup

This recipe is so simple and a favorite of mine. And is the very first soup I learned to make. Best served with hot toast and instantly warms any tummy. 

 

6 pieces chicken on bone

2 medium potatoes, cubed

2 carrots, sliced

1/4 cup frozen corn

2 pinches tumeric

1/4 tsp crushed garlic

1 cinnamon stick

1 cardamon pod

4 cups water

2 Tblsp chicken/veg soup or flour

Salt

Pepper

Fresh coriander, optional

 

Put chicken into pot together with tumeric, garlic, cinnamon stick, cardamon and salt. Braise chicken on medium heat until water dries up. Add carrots and potatoes. Continue to braise for few minutes then add water and leave to simmer on low until vegetables are cooked. Mix soup powder or flour with a little cold water until smooth – add to soup. Garnish with fresh coriander and pepper.
