Curry Leave Mayo Chutney

The smell of beautifully aromatic curry leaves – very pungent and not related to any spice you may have in your cupboard or even at the spice shop.

Most Indian homes (here in South Africa) have a tree if not a few. I was given a packet full of these leaves and wondered what I would do with so much and as you know I really do not like to waste. Off to the internet I went and pulled out a few recipe books. I knew this sauce existed I just didn’t know where to find it or who to ask. So, eventually after much scouting I found it!

It such a tasty sauce. You going to be eating it straight out the bottle or continue tasting it like I did – lol.

1 bottle mayonnaise (750ml)

1 bottle piccalilly (+/-400grm)

6 handfuls of curry leaves

3 Tblsp dessicated coconut

1 Tblsp crushed garlic

3 Tsps crushed cumin powder

3 Tblsp sugar

Green chillies, as many as you like

Salt to taste

Few drops green colouring (optional)

1 Tblsp whole mustard seeds

1/4 cup oil

Wash and dry curry leaves. Blend all ingredients together (except for the mustard seeds and oil) including the curry leaves.

Heat oil in a pan. Add mustard seeds. When it starts to crackle remove and stir into blended mixture.

Cool and bottle. You can use this sauce for anything.
