Spicy Roast Chicken

I got this recipe from a family member. She cooked up a scrumptious storm for her kids birthday party… And I had to have this one! The chicken is so easy to make, moist and delicious. It is a firm favourite in my home now and a quick meal to put together when you have visitors coming over.

Marinate:

1 chicken, disjointed
1 teaspoon crushed garlic
1 teaspoon thyme
2 Tablespoons lemon juice
3 Tablespoons mayonnaise
1 teaspoon aromat
1 Tablespoons ghee/butter
2 Tablespoons Mochachos spice

Sauce
3 Tablespoons Mochachos spice
125g butter

Marinate the chicken with the above spices and leave for a few hours, preferably overnight. Place a sheet of foil onto tray, layer the chicken and cover with another piece of foil. Bake at 180 degrees celcius.
When the chicken has cooked through pour sauce mixture over chicken. Leave the chicken to roast for a few minutes longer without the foil.

Remove and enjoy with chips and salad.

Notes
If you have excess water in your tray, pour out or add it to the sauce. Leave to boil until it thickens, then pour over sauce.
