Delicious Green Salad & Dressing

There is such a variety of salads out there and I don’t think that there is a right and wrong way of making a salad. The ingredient list is endless. You even get sweet salads! Not so healthy though. I love making salads and usually use my creativity with the salad items I have on hand. I think I am going to list a few easy salads and what you can serve it with. It will be great if you share your best salad recipe too. I will provide my quantities as a guide with the salad recipes as you may prefer cucumber to lettuce and so add more of what you like!

Here’s a salad that quick, easy and pleases the taste buds as well as the meal. This salad can be served with curries or light meals like a roast.

Salad 1

Half a cucumber

1 – 2 leaves Lettuce

Few slices onion

Salt

Pepper

1 Tblsp vinegar

1 Tblsp Mayonnaise

Slice cucumber into slice and then into half. Tear some lettuce and a few slices of onion. Season with salt and ground black pepper. Add vinegar and mayonnaise. Mix and serve immediately!

Salad 2

This salad goes well with curries or Dhals and your rice dishes such as Akni, Biryani, etc.

1 carrot, grated

half a cucumber, sliced

few slices onion

1 chilli, sliced (optional)

Mix the above together. Add 2 tablespoons vinegar and season with salt. You can peel the cucumber if you like.

Salad 3

This salad is called Sambals and is best served with Dhal Ghos or even a yummy mutton curry.

2 tomatoes

1/2 onion, finely sliced

1/4 bunch fresh coriander, chopped

1 green chilli, finely sliced (optional)

Deseed the tomatoes and cube. Add coriander and chilli. Mix well and add approximately 1 tablespoon of vinegar and season with salt. You can use the inside of the tomato for a curry – it does not have to be wasted!

Salad 4 

Green salad accompanies any meal or is great on its own too! I prefer a god green salad with biryani or a lite meal – like roast or saucy chicken…. the list can just go on. Your quantity for salad will depend on the size of your platter. I have included a picture so it gives you a fair idea.

Cucumber

Lettuce

Olives

Pineapple, cubed

Feta Cheese, cubed

Green Pepper, sliced

Salad Tomatoes, whole or sliced

Carrot, julienned or grated

Pecan Nuts

Raspberries

Strawberries

Grapes

The list for this salad really is endless. Once you have washed all your salad items, dry them properly on a paper towel or clean dish cloth. Layer the items on your platter starting with your lettuce, carrot, cucumber, pineapple, pepper, tomatoes, feta and olives, nuts, berries….. You could slice your cucumber and layer it around your platter or use a potato peeler and run it lengthwise of the cucumber to get it the way I have done in my platter. As I mentioned earlier, there is no right and wrong way. Use your creativity to layer your salad – so long as you and your guests are enjoying it!

Honey Mustard Dressing

This is such a delicious dressing and so easy to make.

You will need:

4 Tblsp Mustard sauce

4 Tblsp extra virgin Olive oil

2-3 Tblsp honey

salt and pepper to season

1 tsp lemon juice

Mix all the ingredients together and taste. If you need to add a bit more mustard or anything else to so a little at a time. Picture in salad below.
