Asian Noodles

I love asian food but I always find it difficult searching for that authentic taste especially at halal restaurants.  Simply Asia a thai eatery is so yum but so far too.  I decided there was no other way but to make my own.

So, I took to the Internet for ideas and more information and this is what I put together.

1 onion, sliced
1 small packet Broccoli stems
1 tray baby corn, halved
1 tray baby bok choi
1 heaped teaspoon crushed garlic
1 teaspoon white pepper
2-3 tablespoons oyster sauce
2-3 tablespoons soy sauce
1 teaspoon fish sauce (optional)
4 tablespoons oil
Egg noodles

Heat oil then add garlic and fry being careful that it doesn’t burn. Add in the onion, sauté for a few minutes then add the vegetables except for the baby bok choi. Sauté for a few minutes adding white pepper then add the sauces. Cook until it begins to soften. You don’t want to over cook the veggies.

In the meantime, get some water to the boil with a teaspoon of salt. Add noodles to boiling water. Let the noodles boil until just cooked. Drain in a colander and add to cooked vegetables.

Stir fry veggies and noodles for a few minutes then add bok choi. Taste, adding in extra pepper and sauces according to your taste. Drizzle olive oil, toss and serve.

I made the this a second time and added the above veggies together with a punnet of mushrooms sliced, a carrot which I sliced with a potato peeler, sliced green pepper and mung sprouts.
