Carrot Loaf

Light, soft, delicious carrot loaf. Definitely not dense. Yummmmm…..E!

2 eggs, lightly beaten
1/3 cup oil
1 1/4 cups flour
1 tsp bicarbonate of soda 
1 tsp baking powder 
1 tsp cinnamon powder
1/2 tsp mixed spice 
1/2 cup brown sugar
1/4 cup white sugar 
1/4 cup buttermilk
1/4 cup milk


Handful of raisins 
Handful of pecans, chopped 
1 cup grated carrot

Preheat oven to 180 degrees Celsius. Grease a loaf tin. Sift dry ingredients. Mix above ingredients then stir in rest of ingredients as stated above. Pour into loaf tin, sprinkle chopped pecans on top and bake for approximately 45 minutes or until the centre springs back when touched.
Cool in tin for 10 minutes then remove and place on a cooling rack.

This recipe can be used for cupcakes or a cake.
