1/2 teaspoon tumeric powder
2 teaspoons crushed garlic
2 teaspoons crushed green chillies
2 teaspoon crushed cummin powder
1 teaspoon crushed coriander powder
1 teaspoon garam masala, optional
Salt to taste
Fresh coriander, chopped
Wash mince and drain well. Add mince and rest of ingredients to pot except the onion and fresh coriander.
Braise the mince until all the water has dried up and the mince looks like crumbs.
The mince will look dry, don’t worry the onions gives it moisture.
Once the mince is cooked and all the water has dried, leave aside to cool. In the mean time take 2-3 onions and chop it in the food processor. Remove into a clean cloth and squeeze our all the water. Add to mince mixture. Add the coriander and mix through.
Now taste, taste, taste! If you feel that the mixture requires any additional spice or onion, this is the time to add it in.
Samoosa filling ready to go….
– Use this and any recipe as a guide and change it to your liking, especially when it comes to the adding of spices.
– You can use beef or mutton mince.
– Do not cook the mixture once the onions have been added.
– You can use ginger garlic mix. I use what I have on hand. I always add extra as I do not like that meaty taste.
