Spinach and feta pies

 

I don’t usually make veggie pies or should I say non-meat pies because that’s the one that people are least attracted too.

All I can say, these spinach and feta pies are rich, oozy, cheesy, yummy goodness!

Go on… Try it out!  You going to be a star in your family and with your guests…

1 pkt McCain frozen creamed spinach
1/2 cup frozen corn
1/2 grated mozzarella
2 rings feta cheese
2-3 tablespoons cream cheese

Microwave spinach as per packet instructions. Stir well. Leave aside.

Rinse corn and fry in a tablespoon of butter. Mix 1/2 a tablespoon cornflour with a little water and add to corn. Stir well and add to spinach mixture. Mix in the cream cheese and leave to cool.

Add 1/4 teaspoon cracked black pepper, a pinch of jeeru powder and the cheese – mix well and fill pies.

Notes:

– You can use fresh spinach which you would need to cook it down with a bit of butter and garlic sauted onions, when soft add spinach. Season with salt and leave to cool. Follow the above recipe.

– You can use a bit of cream instead of creamed cheese.

– Of you wish to make this a meat option – Add in some cooked chicken.
